Sweet Rice Crepes With Vegetables

  1. Add hot water(3 Cups) to sweet rice flour. Mix and bake the batter into several small sized crepes in a hot oily pan.
  2. Peel zucchini off into 0.2cm thick and stir-fry it in a pan with sesame seed oil lightly.
  3. Cut carrot into thin strips and sprinkle with salt. After a few minutes, squeeze the liquid.
  4. Cut cucumber into stirps and add salt. Remove the liquid.
  5. Stir-fry enoki mushrooms with sesame seed oil slightly.
  6. Mix all vegetables and mushroom with mustard sauce.
  7. Spread the zucchini slice bottom and add sweet rice crepe on top. Arrange vegetables on the crepe and roll all together.
