Vegetable Stuffed Zucchini

  1. Wash zucchini and cut it half in length.
  2. Cut zucchini into 2.5-3cm think in half moon shape.
  3. Slice it again into 3 pieces but must leave 0.5cm uncut to place stuffing with ease.
  4. Cut red & green pepper in half and into julienne strips.
  5. Cut carrot & shiitake into julienne strips.
  6. Toss a pinch of salt into carrot and leave it for a min. Squeeze liquid and stir-fry it with sesame oil.
  7. Season shiitake with say sauce & sesame oil for desired taste. Stir-fry.
  8. Steam zucchini slices in a pot for 3 min.
  9. Mix all vegetables with seasoning.
  10. Stuff seasoned vegetables into steamed zucchini with chopsticks.

  • Carrot 1/2ea
  • Soaked shiitake 2ea
  • Red & green pepper each 1ea
  • For seasoning: Soy sauce 1/2C, red pepper powder 1Ts, grain syrup 1Ts, sesame seed 1Ts, sesame oil 1Ts
