Fried Burdock & Minari Ties

  1. Blanch minari stalks in boiling salty water.
  2. Rinse it in cold water and squeeze liquid out.
  3. Soak dried shiitake in water and drain it.
  4. Cut shiitake into 3 cm long stirps.
  5. Season shiitake with soy sauce and sesame oil.
  6. Peel burdock and cut it into 1×3 long and flat. Season it with soy sauce.
  7. Mix sweet flour and water.
  8. Dip sliced burdock into No.7 and deep fry it.
  9. Cut green-red peppers into smaller size of burdock slice.
  10. Arrange shiitake and green-red peppers on fried burdock slice and tie together with minari stalk.
  11. Serve with red dip sauce.

  • For frying batter: sweet rice 3Ts, water 1.5T
  • For dip sauce: red pepper paste 1Ts, vinegar 1Ts, grain syrup 1/2Ts, sesame seed 1ts
