Pak Choi Kimchi

Pak Choi Kimchi

  1. Cut the pak choi half length-wise.
  2. Place the pak choi in a large bowl and massage the salt into the pak choi.
  3. Add 3 cups water to cover the pak choi. Let stand for 20-30 min.( Turn once halfway)
  4. Rinse and drain the pak choi.
  5. For starch, put water and sweet rice flour into a pot and cook over medium heat till boiling.
  6. Turn the heat off and let it cool.
  7. For sauce, mix starch, soy sauce and green plum syrup together.
  8. Add pear juice, ginger juice and red pepper powder.
  9. Add more salt to desired taste.
  10. Massage the pak choi gently with the sauce.
  11. Serve on the plate.
  • Pak choi 800g(16-18ea)
  • Red pepper powder 1C
  • Soy sauce 1Ts
  • Pear for juice only 1/2ea
  • Ginger juice 1ts
  • Green plum sugar syrup 3Ts
  • Salt 3Ts
  • Sesame seed 1Ts
  • Sweet rice flour 2Ts +Water 1C as starch
